This is how our chefs’ signature menus begin in DGI Byen’s green kitchen, where we treat our meeting guests in Øksnehallen and at CPH Conference every day. Each day’s dishes are made from healthy ingredients, sharing roots with the gourmet restaurant around the corner—except when we grow them ourselves on our own fields across Denmark.
