Our ingredients are primarily organic, seasonal, and locally sourced, with an emphasis on quality and sustainability. The menu combines healthy and delicious – with vegetables, whole grains, and plant proteins at the centre.
We prioritise taste, variety, and visual delight, ensuring lunch is a well-deserved break. Sustainability guides everything we do – from ingredient selection to food waste – and we are proud of our organic bronze certification.

That's how the chefs' signature menus begin in DGI Byen's green kitchen, which every day pampers both our meeting guests in Øksnehallen and at CPH Conference. The day's dishes are composed of healthy ingredients that share roots with the gourmet restaurant around the corner – unless we're growing them ourselves, in our own fields across Denmark.
